It&#039;s hard to troubleshoot not being there, but I have a couple potential causes: 1- old or expired baking soda or baking powder can cause recipes to turn out less than ideal. If you&#039;re not sure how old your baking soda or powder is, I recommend starting with a new box. Another reason baked recipes can fall flat is high altitude. We live close to sea level, so our recipes have not been tested in our own kitchen at high altitudes. If you do live at a high altitude, you may need to adjust accordingly.
