Slow Cooker Italian Beef Sandwiches

Italian beef sandwiches are a hot sandwich featuring tender shredded beef in a tangy seasoned broth, topped with Italian peppers and served on a hearty sandwich bun. They're so easy to make with a slow cooker!

Ingredients

  • 1/2 cup pepperoncini peppers sliced
  • 1/2 cup pepperoncini brine from the jar
  • 48 oz. beef broth
  • 3-4 lb. beef bottom round roast or rump roast
  • 28 oz. crushed tomatoes
  • 1/3 teaspoon black pepper
  • 1/3 teaspoon salt
  • 6 Hoagie rolls

Instructions

  • Add the beef roast to slow cooker with beef broth. Add the pepperoncini's and pepperoncini juice.
  • Add the crushed tomatoes and season with salt and pepper.

  • Place the lid on on the slow cooker and set to "high." Slow cook for 6 hours, then remove the lid to pull apart the roast with a fork. Make sure to press the meat back down into the juice. Cover and cook for 2 more hours.
  • When ready to serve, place the shredded beef on sliced hoagie bread. Be sure to add a couple of the pepperoncinis and a bit of the juice too!
