Cheesy Celery Root Casserole

This cheesy celery root casserole is a delicious and healthy alternative to traditional potato casseroles. This easy and hearty dish is perfect for potlucks or weeknight dinner.

Ingredients

  • 3-4 celery roots (peeled and chopped)
  • 6 TB butter
  • 1/2 cup sour cream
  • 8 oz cream cheese
  • 1/4 cup green onions sliced (plus extra for garnish)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup cheddar cheese grated
  • 1/4 cup parmesan cheese grated

Instructions

  • Peel the celery root with a sharp knife. You will not be able to peel these like you do a potato. You will carefully, slice off the thick peel to get to the lighter colored vegetable underneath.
  • Chop the peeled celery root and place in a large pot. Add a couple of inches of water.
  • Steam the celery root until tender, about 20-30 minutes. Drain and cool somewhat.
  • Combine the celery root, 4 Tablespoons of butter, sour cream, cream cheese, ¼ cup of cheddar cheese, parmesan cheese, salt, pepper. You can use food processor or just smash together with a potato masher. Stir in ¼ cup of green onions.
  • Spoon the mixture into a baking dish. Sprinkle with grated cheddar cheese and the remaining green onions.
  • Bake for about 30 minutes, until the casserole is bubbly.
