This Pineapple Upside Down Fudge is a unique twist on no bake fudge! This homemade pineapple fudge is filled with cherries and tastes just like pineapple upside down cake!

- 1 can sweetened condensed milk 14 ounces
- 1/2 cup yellow cake mix
- 2 1/2 cups white chocolate chips
- 3/4 cup candied pineapple chopped
- 16 maraschino cherries stems removed and cut in half
Line a 9x9 inch square baking dish with parchment paper
Combine the sweetened condensed milk, cake mix, and white chocolate chips into a medium pot over medium - medium high heat.
Whisk until smooth, then remove from heat.
Fold in the chopped pineapple.
Pour fudge into the baking dish and smooth with a spatula if needed.
Scatter the cherries on top of the fudge.
Allow to harden at least 2 hours, then cut into squares.
