Oven Baked Mashed Potatoes

Baked mashed potatoes combine the creaminess of stovetop mashed potatoes with the texture and taste of scalloped potatoes. Think of it like a mashed potato casserole!

Classic mashed potatoes are blended with cottage cheese, topped with a crispy coating, and baked until golden brown on the outside and warm and creamy on the inside. This is a fantastic recipe to try when you want a potato side dish that pairs well with everything and is a little different than the usual mashed potato recipe.

The smell of these potatoes and cheese baking is out of this world amazing.

The potatoes are the star and the addition of cottage and parmesan cheese accentuate the delicate taste of the potatoes. Of course a little butter also adds to the classic mashed potato taste.

This fantastic side dish will definitely be a part of our family dinners from now on! I highly recommend trying this one for Thanksgiving or Christmas dinner. It’s sure to be a crowd-pleaser and it’s pretty simple to prepare!

Ingredients

  • 5 large potatoes. I used Yukon gold potatoes for this post.
  • 2 Tablespoons butter
  • 1 teaspoon garlic powder
  • Dash of hot Sauce (optional)
  • 1 Tablespoon grated onion
  • 1 1/2 cups small curd cottage cheese
  • 1 1/3 cups grated parmesan cheese
  • 4 eggs beaten

For the Topping

  • 1/2 cup Parmesan cheese
  • 1 cup cornflakes, crushed

Instructions

To Prep: 

  • Boil the unpeeled whole potatoes in a large pot, until fork tender. Drain waiter from the pot and allow the potatoes to cool until you can safely handle them.
  • Preheat oven to 350°F.

To Make the Dish:

  1. Peel all the potatoes and return to the pot or place in a large bowl.
  2. Add butter, hot sauce, and salt and mash with a potato masher or use electric mixer to desired creaminess.
  3. Stir in the cottage cheese, parmesan cheese, eggs, garlic powder, and onion to the mashed potatoes.
  4. Spoon mashed potato mixture into a greased 9X13 baking dish or oven-safe casserole dish. Sprinkle the top with a mixture of crushed cornflake crumbs and Parmesan cheese and bake at 350 degrees for 30 minutes.

Prep Tips

  • Cheese – You could use sour cream or cream cheese in place of the cottage cheese or cheddar cheese in place of the parmesan cheese.
  • Mix-Ins – This recipe can be customized with your favorite baked potato toppings. You can either mix them in before baking, or serve on the side to use as toppings. Try it with bacon, chives, or just a sprinkle of salt and black pepper. We loved the flavor of green onions sprinkled on top after the casserole came out of the oven!
  • Prep Time – This potato recipe is a great make-ahead dish which really comes in handy at holiday meals or times when you want to prepare some of your dishes ahead of time. For this post, I cooked the potatoes and assembled the casserole the day ahead of cooking it. I let the dish come up to room temperature before popping it in the oven to bake.

The best potatoes to use for baked mashed potatoes are those that are high in starch and low in moisture. These starchy potatoes will produce a light and fluffy mash that is perfect for baking. Some of the best potatoes for baked mashed potatoes include: Yukon Gold (which is what we used), Russet Potatoes, and white potatoes. Russet potatoes can be quite large, so you may want to choose medium Russet potatoes if that is the kind of potato you’re using.

How Long Does This Dish Stay Good?

All leftovers should be covered or stored in an airtight container in the refrigerator. This dish can stay in the fridge for 3-5 days. To reheat, I recommend heating in the oven, uncovered. To do so, place the pan in the oven and press the preheat button. When the oven reaches temperature, the dish should be warmed throughout.

Is This A Gluten-Free Recipe?

Most of the ingredients in this recipe are naturally gluten free. However, some brands of corn flakes may be made with ingredients such as malt flavoring, which contains gluten. You will want to look for corn flakes that are certified gluten free.
