Mint Chocolate Brownies with Frosting
These mint chocolate brownies were a staple on our family’s Christmas cookie table, and they were always one of my favorite treats!
Here’s the scoop: homemade brownies are topped with a layer of cool and creamy mint frosting and a rich chocolate ganache for an irresistible combination of flavors and textures.
The green color makes them look especially festive and they are loaded with chocolate flavor that is perfectly complimented by a hint of mint. I vividly remember sneaking many, many of these delicious little minty chocolate bites as a kid! — Stacey

Ingredients

Brownie Batter
- 1 cup unsalted butter, melted and browned
- 8 ounces semi-sweet chocolate chips
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 3/4 cup all purpose flour
Mint Frosting
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon peppermint extract
- Green food coloring
Chocolate Ganache Topping
- 1/2 cup heavy cream, warmed
- 1 cup semi-sweet chocolate chips
Helpful Kitchen Tools
- 9-inch Square Baking Pan
- Electric Mixer or Stand Mixer
- Microwave-safe bowl
- Parchment Paper

Instructions
To Prep: Preheat oven to 350°F (175°C) and line a 9-inch square baking dish with parchment paper.
- Place chocolate chips in a large heat-safe bowl. In a separate microwave-safe bowl, melt the butter. Pour the melted butter on top of the chocolate chips and let sit for 1-2 minutes, then whisk together until melted and smooth.
- Add in the granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
- Add the flour and salt, mixing until just combined.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. Let cool completely before frosting.
To Make The Mint Layer
- In the bowl of a stand mixer (or in a mixing bowl, using an electric hand mixer) beat the softened butter until creamy.
- Gradually add in the powdered sugar, milk, peppermint extract, and green food coloring, mixing until smooth and fluffy.
- Spread the mint frosting evenly over the cooled brownies.
To Make the Ganache
- In a small saucepan or microwave-safe bowl, warm the heavy cream until just hot (but not boiling).
- Pour the warm cream on top the chocolate chips and let sit for a minute, then stir until smooth and melted.
- Gently spread the ganache on top of the mint frosting.
- Chill the brownies in the fridge for 15 minutes, or until the ganache is completely set.

Prep Tips
- Yield – When cutting the brownies into 4 rows of 4, you will have 16 brownies that are about 2 inch squares. For 9 larger brownies, you could cut into 3 rows of 3.
- Food Coloring – If looking to avoid artificial dyes, plant based food coloring can be used for the green mint layer.
