Old-Fashioned Sautéed Spinach

Ingredients
- 5 Ounces Fresh Spinach (a typical bag)
- 1 Tablespoon Olive Oil
- 1 Teaspoon Minced Garlic
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Pepper

Instructions
- Add olive oil and garlic to a medium skillet over medium heat.
- As the pan starts to warm up and the oil thins out, add the spinach by a handful at a time. As the spinach cooks down, add more spinach until it is all in the pan. Stir gently so it doesn’t burn.
- When the spinach has reduced by about half (about 3 minutes of cook time), season with salt and pepper.
- Cook the spinach for another 2-3 minutes, until you have your desired consistency.

Prep Tips:
- Yield – This recipe makes about 1 cup of cooked spinach, or about 1-2 servings.
- Storage – Keep in an airtight container in the fridge for up to 3 days. Do not freeze.
- Types of Spinach – You can use your favorite spinach for this recipe. I’ve used baby spinach and regular spinach and both turned out perfect.
- Pan Prep – Add the garlic and oil to the pan before it is hot, so the garlic heats up slowly. This will create the best flavor.
