Ingredients
- 4 chicken breasts, halved and diced
- 4 cups rice, cooked
- 2 (10.5oz) cans cream of chicken soup
- 12 oz frozen broccoli, cooked and drained
- 2 large eggs
- 1 cup milk
- 1 cup grated cheddar cheese for topping if desired

Instructions
To Prep: Preheat oven to 350°F.
- Cook the Rice – Prepare rice according to package instructions.
- Pre-cook the Chicken – While the rice is cooking, prepare the chicken. Dice chicken breasts and sauté with olive oil in a large skillet over medium heat, until almost cooked through. Season to taste with garlic salt and black pepper.
- Mix the Ingredients – Add the cooked rice, chicken, cream of chicken soup, milk, and eggs to a large casserole dish. Stir together until just combined and spread evenly.
- Bake – Top with the casserole with shredded cheddar cheese, cover with aluminum foil, and bake for 20-30 minutes, until cheese is melty and chicken is cooked through.

Prep Tips
- Milk – If the mixture seems too dry before baking, you can stir in a couple extra Tablespoons of milk. You can also make this with a plant based milk instead of dairy milk.
- Chicken – To save time, you can use a pre-cooked rotisserie chicken. Debone and shred the chicken into bite-sized pieces and add to the casserole dish before baking. Chicken thighs are another option if you prefer them over chicken breasts.
- Cheese – The shredded cheddar cheese is optional, you can omit if that is your preference. You could also use a different type of cheese.
- Broccoli – We used frozen broccoli for this dish but you can of course use fresh broccoli florets too.
- Rice – We used white rice, but brown rice or wild rice would taste great in this dish too!
- Toppings – This dish can be customized with your favorite toppings, from bread crumbs to crumbles Ritz crackers. You can also sprinkle with parmesan cheese or top with fresh herbs before serving.
- Storage – Keep leftovers in an airtight container in the fridge for up to 2-3 days. To reheat, you can microwave (in a microwave-safe dish) or put the baking dish in the oven and set to preheat. When the oven comes to temperature, the casserole should be warmed.
- Meal Prep – This broccoli chicken casserole recipe is a great recipe for meal planning and meal prep! Simply prepare the broccoli chicken rice casserole per the directions, cover, and keep refrigerated for up to 2 days. You can also prepare and transfer to a freezer safe dish and freeze for long-term storage. - 1 cup milk
- 2 eggs
- 12 oz frozen broccoli cooked and drained
- 1 cup grated cheddar cheese optional for topping

- To Prep: Preheat oven to 350°F.
- Cook the Rice - Prepare 4 cups of rice according to package directions.
- Pre-cook the Chicken - While the rice is cooking, add diced chicken to a large skillet with olive oil. Stir occasionally until chicken is almost fully cooked.
- When the chicken is done, season to taste. The original recipe uses garlic salt and black pepper.
- Add cooked rice to the casserole dish and top with the cooked chicken, cream of chicken soup, milk, and eggs. Stir together until just combined.
