No Bake S’Mores Cake
This chocolaty dessert is reminiscent of one of my favorite treats growing up: s’mores. S’mores cake combines graham crackers, marshmallow cream, chocolate pudding, and whipped topping to create a velvety smooth no-bake dessert.
The best part…you don’t have to wait for camping trips or make a campfire to enjoy this delicious combo! This No-Bake S’mores Cake brings all those nostalgic flavors together in a creamy, easy-to-make dessert. It’s the perfect way to enjoy the essence of s’mores without the need for an oven, campfire or a mess.
When I was growing up, our family had a little pop-up camper that we’d go on weekend camping trips with other families.
One of the highlights of these weekends were the nightly campfires where we would always make s’mores by roasting marshmallows and sandwiching between two graham crackers with a piece of milk chocolate.
First, we’d have to find the perfect stick. It needed to be fresh so it wouldn’t catch fire. It also had to be long enough that you wouldn’t be too close to the fire.
It seemed like everyone had their own technique for roasting the perfect marshmallow. My preference has always been to have it equally browned all over, never burned.
After roasting your marshmallow, you’d bring your marshmallow, still on the stick, over to your mom, who would have the graham cracker and a piece of chocolate ready for you to tuck your marshmallow into.
I still think those s’mores of my childhood were the perfect dessert.
This six-ingredient recipe is easy to put together. Since it requires four hours in the refrigerator, I like to make it early in the day to have ready for dinner time.
The result is creamy chocolatey layered dessert that melts in your mouth. It’s sweet and flavorful but still tastes light.
Plus, it’s easy to make ahead of time and requires no baking—just a little patience while it chills in the fridge.

Ingredients
- 1 box of Graham crackers
- 1 box of Chocolate instant pudding mix (3.9-ounce size)
- 1 1/2 cups milk
- 1 1/4 cup whipped topping (such as Cool Whip)
- 1 small jar of marshmallow cream (7oz)
- Grated chocolate or crushed graham crackers for garnishing (1/4 to 1/2 cup)

- Electric Mixer or Stand Mixer with Whisk Attachment
- 8-inch Square Baking Dish
- Offset Spatula
Instructions
To Prep: Line 8X8 pan with graham crackers.
- Whisk pudding mix and milk together, pour half of the pudding mixture on top of the graham crackers.
- Mix whipped topping with the marshmallow cream, beat until smooth in a large bowl with electric mixer. Gently spread half of this marshmallow mixture on top of the pudding layer.
- Add another layer each of graham crackers, pudding, and marshmallow, then top with a sprinkle of grated chocolate. If your pan still has a lot of space at the top, you can add another layer of each until it is full.
- Cover with plastic wrap or a lid; refrigerate for at least four hours to set.

Prep Tips
- Graham crackers – Growing up, as far as I knew there was only one brand and if I was making s’mores over the fire, that’s what I would use. I bought a store brand and they worked fine. Because this cake sits in the refrigerator for a few hours, the crackers get soft and blend with the rest of the ingredients. Mine fit pretty well out of the package but you can break them and fit them however you want. You might not use the whole box, but make sure you have enough to make at least two layers of graham crackers.
- Chocolate – Use any chocolate bar you want. I used a dark chocolate for a more dramatic look. I used a box grater to grate about 1/2 cup and used about 2 ounces.
- Marshmallow – Either marshmallow creme or marshmallow fluff will work here.
- Whipped topping – For this recipe I recommend that you use whipped topping (such as Cool Whip) versus real whipped cream, which won’t hold up well over time.
- Toppings and Garnish Ideas – This is a fun recipe to serve because you can keep it simple, with chocolate shavings or chocolate syrup on top. I also used graham cracker crumbs. Or you can make it fancy, but topping with chocolate bars and toasted marshmallows. You can toast the marshmallows with a kitchen torch or any way you’d usually make real s’mores at home.
- Serving – When serving an icebox cake like this, to help keep the layers nice while serving, I run the knife under hot water and keep a damp towel nearby to wipe it off between slices.

S'Mores Icebox Cake
Equipment
- 2 Medium mixing bowls
- 1 8X8 pan
- Hand mixer
- whisk
Ingredients
- 1 box Graham crackers
- box Chocolate instant pudding mix 3.9-ounce size
- 1 ½ cups milk
- 1 ¼ cup whipped topping thawed
- 7 oz marshmallow cream
- 2 ounces Grated chocolate or crushed graham crackers for garnishing
Instructions
- Line the bottom of an 8-inch square pan with graham crackers.
- In a medium bowl, whisk pudding mix and milk together, then pour half of this mixture over the graham crackers.
- In a clean mixing bowl, combine the whipped topping with the marshmallow cream, and beat until smooth.
- Gently spread half of the marshmallow mixture over the pudding.
- Add another layer each of graham crackers, pudding, and marshmallow mix.
- Sprinkle grated chocolate on top.
- Cover and refrigerate for at least four hours.
