Cheesy BBQ Biscuit Cups

Here is a fun, easy, and delicious recipe to serve the family. Barbecue biscuit cups are a great way to combine the taste of your favorite BBQ sauce and flaky buttery biscuits.

Best of all it’s easy to put to together and have on the table quickly, in 30 minutes or less!

This recipe is from a time when fast food wasn’t available. Home cooks devised their own “fast food” options using the convenience foods that were on the market, such as canned biscuits.

So instead of picking up fast food that is usually drooping by the time you get home, you can prepare and serve a hot dinner at home in the same amount of time you’d spend getting to and going through the drive through.

The filling for these BBQ cups can be prepared ahead of time and the cups assembled and baked right before you want to serve them.

We found this recipe in one of our old cookbooks and decided to give it a try for a recent weeknight dinner. It was a big hit and I think we found a new favorite recipe!

Ingredients

  • 1 pound ground beef
  • 1/4 of an onion, diced (or 1 teaspoon dried onion)
  • 3/4 cup Barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1 can refrigerated biscuits
  • Salt and pepper, to taste

Instructions

To Prep: Preheat oven to 350°F. Coat a 12-cup muffin tin with non-stick cooking spray.

  1. Brown ground beef and onion, turn off heat. Drain fat from the cooked meat. Add barbecue sauce and stir to coat meat.
  2. Press biscuits into muffin tins.
  3. Spoon about 2 tablespoons of the meat mixture into the biscuit cups Top each muffin with grated cheese.
  4. Bake for 15 minutes until biscuit is cooked through and cheese is browned on top.

Prep Tips

  • Biscuits – The original recipe calls for the smaller biscuits that come 10 to a can. I only had the large biscuits on hand, so I made that work by trimming all of them and making two extra biscuits from the pieces. If you have the bigger biscuits, cut a fourth off each of them and make twelve cups. You can’t tell once the whole thing is baked.
  • Meat – Our recipe called for ground beef. Feel free to substitute ground turkey or chicken if that sounds better to you. I found that using a pound of ground meat as the recipe called for was more than needed. You’ll have extra BBQ mix that you could use for another meal.
  • Sauce – Feel free to use your favorite type of barbecue sauce, like our easy homemade barbecue sauce recipe. Of course, the store-bought sauce is fine too! You could also try an Italian flavored sauce with mozzarella cheese or something like a Sloppy Joe sauce.
  • Onions – I also love how you could customize this recipe for your own tastes. For example, I love onions, so I used plenty of fresh diced onions. If you aren’t an onion person, you could use a teaspoon of dried onion instead or omit it all together.
  • Serve With – For a barbecue side dish, I love a great coleslaw recipe but of course you can have any of your family favorite vegetables on the side to round out the meal.
